Sweet and Sour Meatballs

I know, I know. I said I would start posting again days ago and then everything went haywire around here. LOL So here we go, back to recipes...

We made sweet and sour meatballs with rice for dinner. Yum! The kids ate every bite.

Sweet and Sour Meatballs with Rice


Meatballs:

1 lb ground beef
1 cup unseasoned bread crumbs
1 onion, finely chopped
1/2 cup raw broccoli, chopped fine
1/2 cup raw carrots, chopped fine
2 eggs, beaten
1/3 cup non-dairy milk (almond, coconut, soy or rice)
1 tsp salt
1 tsp basil
1/2 tsp parsley
1/2 tsp oregano
1/2 tsp garlic powder
1/4 tsp ground pepper

Preheat oven to 350 degrees. Spray a 13x9 inch casserole dish with non-stick spray or olive oil and set aside.

In a large bowl combine all of the ingredients. Mix with your hands to thoroughly combine.

Shape the mixture into 1 inch meatballs and place in the prepared casserole dish. Set aside.

Next make the sweet and sour sauce:

1 bell pepper, seeded and diced
Juice from 1 (15 oz) can of pineapple chunks (or crushed pineapple) - hold onto the pineapple
1/2 cup ketchup
1/2 cup brown sugar
1/2 cup white vinegar
3 Tbsp cornstarch
1 tsp garlic powder
1/2 tsp mustard powder
2 Tbsp Worcestershire sauce
1/2 tsp ground ginger

Combine all of the sauce ingredients in a small bowl and mix well with a wire whisk. Add pineapple chunks to suit your tastes (we like pineapple so I used about 1/2 the can).


 (We mixed the sauce in a pot because we had bread rising in our large bowl - I really need another set of mixing bowls, LOL)

Pour the sauce over the meatballs in the casserole dish.


Place in the oven and bake for 30-35 minutes.


While the meatballs are cooking, prepare the rice. We made Jasmine rice to go with the meatballs.

When the meatballs are finished, scoop them out and serve over the prepared rice. Serve alone or add some steamed broccoli or carrots for color.

Over a year, a busy year...

It has been such a long time since I have posted anything on this blog. I almost gave up and thought about deleting the blog altogether and starting over from scratch. However, I didn't want to completely give up on what I had already put into this blog.

So, what's been going on around here? A LOT! My kids won't stop growing up so fast. My oldest is now 11 and only 3.5 months shy of turning 12. That's a scary thought for me. It was hard enough that he started 6th grade and middle school this year. The next one down is now 10, he finally got to double digits and he enjoys rubbing my face in it. And the baby, she is now 5, started Kindergarten and loves to think of herself as the princess. But the baby is no longer going to be the baby... we are currently expecting our 4th little one, due at the end of January 2012.

But despite our long hiatus, we are back. The kids are still taking over my kitchen, even more than they used to as well. Now we are also more careful about our meals as well, becoming more observant in our beliefs over the past year. So there is quite a change from how we were cooking over a year ago. We put a lot more thought into what we are preparing but we're still trying to keep the meals fast, easy, inexpensive and kid-friendly.
